Family Circle Black Bean Soup

Ingredients
2 tbsp olive oil2 whole carrots, peeled and diced2 ribs celery, trimmed and diced1 med onion4 colves minced garlic2 14 oz cans vegetable broth1 envelope ham flavoring (Goya)1 tsp dried oregano1.2 tsp cayenne2 cups water6 cups drained and rinsed can of black beans (5 cans)
Directions
heat oil, add carrots, celery, onion and garlic. Cook over medium heat for 5 min. Once fragrant and slightly softened, add vegetable broth, Goya flavoring, oregano, cayenne, water and beans. Bring to simmer. Reduce heat to medium-low and cook, covered, for 20 minutes, stirring occasionally. Puree soup in batches; serve warm with sour cream (optional).
