Italian Rice Salad

Ingredients
1 cup long grain white rice, cooked & left to cool2 artichoke hearts, roughly chopped7 oz can of tuna packed in water1/3 cup frozen peas, cooked & cooled1 large tomato, diced small1/4 cup mozzarella cheese, cubed 1/4 green bell pepper, diced3 mushrooms, thinly sliced2 tablespoons pine nuts, lightly toasted2 tablespoons finely chopped fresh flat-leaf parsley4 tablespoons EVO1.5 tablespoons lemon juice1 clove garlic, finely chopped1 tsp. salt1/2 tsp. black pepperMix together rice, artichoke hearts, tuna, peas, tomato, cheese, bell pepper, mushrooms, pine nuts, and parsely in a bowl.Mix together the oil, lemon juice, garlic, salt & pepper (or shake in a tight fitting jar). Pour dressing over the rice mixture and combine thoroughly.It's easy to adapt this recipe to vegetarian by omitting the tuna and adding olives, sun dried tomatoes, capers, etc.
