Clean Eating Bulgur Waldorf Salad

Ingredients
1 cup prepared bulgar1 Granny Smith Apple, cored and cut into 1/2-inch pieces1 tbsp fresh lemon juice1 cup celery, thinly sliced1 cup red seedless grapes, halved lengthwise1/2 cup low-fat plain yogurt6-8 sprigs fresh mint, chopped (about 2 tbsp)Pinch fresh ground black pepper3 tbsp unsalted walnut pieces, toasted and chopped
Directions
One: Place bulgur in a large bowl. Add apple and lemon juice and stir to combine. Add celery, grapes, yogurt and mint, mixing thoroughly. Season with pepper.

Two: Cover and refrigerate for a minimum of 1 hour or overnight to allow flavors to meld. To serve, sprinkle each serving with 1/2 tbsp of walnuts.
