Grilled Spinach Salad

Ingredients
1 clove garlic-crushed2 thin sliced onion rings6 raw almonds-slivered2 cups fresh spinach2 oz cooked grilled chicken, cut into stripsSalt/Pepper to taste1/2 tbsp. light margarine1/8 cup Mandarin oranges
Directions
Grill chicken in a skillet until done. Remove chicken. Saute almonds and butter in sauce pan. Allow almonds to get a bit soft. Add garlic and onion. Cook until onion begins to caramelize. Add spinach and cook just until spinach begins to wilt. Serve on plate and top with chicken...garnish with mandarin oranges.
