GOYA Blackeye Peas, 1.75 cup *Goya Black Beans, 1.75 cup Pimentos, 1 cup*Green Giant White Shoepeg Corn, 1.4 cup *Jalepeno Pepper, 170 gram(s) *Red Onion, raw (chopped), .25 cup Celery, raw, 2 stalk, medium (7-1/2" - 8" long) Granulated Sugar, .5 cup Olive Oil, 1 cup *apple cider vinegar, .5 cup
Drain: black eyed peas and black beans.
Chop fine: celery, onion, jalepenos and pimentos
Combine beans and vegetables, set aside
Combinbe olive oil, sugar and vinegar in a sauce pan and boil until sugar dissolves and then simmer for 5 minutes. Let cool.
Add to vegetables.
Marinate overnight.
Drain before serving.
