1.5 lbs pork tenderloin, cut into cubes1/3 cup vinegar2 Tbsp soy sauce1 tsp salt3 cloves minced garlic1 bay leaf1/2 tsp pepper1 Tbsp sugar1/2 cup waterdash of hot sauce (optional)
Mix all ingredients in overed saucepan, let stand 30 minutes or overnight in refrigerator. Bring to boil over medium heat, let cook 60-90 minutes or until meat is tender. Shred with fork, or use as is.
The leaner the pork, the healthier this recipe is. You can also substitue boneless, skinless chick for half the pork, to reduce fat and calories.
