Pork Shu Mei

Ingredients
1 lb lean ground pork (finely ground)2 T light soy sauce2 T rice wine1 t fresh ginger1/2 t white pepper1 T sesame oil1 T green onion1 egg white1 T cornstarch1 t salt4 T chopped bamboo shoots or water chestnuts2 cloves crushed garlic1 package gyoza skins (fresh wonton wrappers)
Directions
Mix ingredients together (food processor or by hand). Put 1T into the center of each wonton wrapper and bring up sides. arrange in an oiled bamboo steamer and steam on high for 15 min.
