Ingredients
1/3 cup canola oil1/2 cup sugar1 egg1 cup sorghrum or other dark molasses3 cups plain flour1.1/2 tsp. soda1/2 tsp. salt1 tsp. cinnamon1 tsp. ginger1/4 tsp cloves1 cup water1/2 cup raisins1/2 cup chopped nuts
Directions
Cream the shortening and sugar together. Beat in egg, then molasses. Into a separate container, sift together the dry ingredients; stir into molasses mixture. Gradually add water, beating until smooth. Stir in raisins and pecans. Fill pam sprayed muffin cups about 2/3 full with batter. Bake at 375 for 25-30 minutes. Makes 12 regular size muffins.
