Creamy Broccoli Soup

Ingredients
1 head of broccoli, chopped1 med onion minced1 celery stalk, chopped3 cloves garlic, minced48 oz. (large container) College Inn Light & Fat Free Chicken Broth1 cup milk (fat-free,1% or 2%)Wondra quick mixing flour, up to 16 TbsSalt to tastePepper to taste2 Tbs olive oilShredded low fat cheddar cheeseBaco's bacon bits
Directions
In a large saucepan, boil broccoli until soft, about 10 minutes and then drain. Add 3/4 of the broccoli to blender with 1 cup of chicken broth (reserve some of the chopped broccoli to add in later) In a small saucepan sautee onion, garlic & celery in olive oil until soft - be careful not to burn. In the larger saucepan, add the rest of the chicken broth and the sauteed vegetables. Bring to a boil. Add the blended broccoli mixture and turn heat to low. Add milk slowly while stirring. Add Wondra 1Tbs at a time while stirring until desired consistency is obtained. Add the rest of the chopped broccoli and salt & pepper. Bring to a boil for 1 minute. Serve sprinkled with cheese and bacon bits.

    I invited my best friend over for dinner tonight and decided on fixing this soup. I am not much of a cook, but with her help, this recipe turned out great! It tasted delicious. One extra thing that we added was shredded chicken. Anyway, the soup is tasty and fairly simple to make. - 1/6/10
