Low Carb Roasted Beet Salad

Ingredients
4- 5 beets 5 T olive oil1/4 C walnuts, chopped 1 orange, sectioned1/2 medium red onion sliced 3 T balsamic vinegarSalt and pepper2 oz. blue cheese
Directions
Rub each bit with a bit of olive oil and wrap beets in aluminum foil. Roast at 400 for 40-50 min. or until soft. Allow to cool. Peel cooled beets and then dice into 1/2" cubes.

Add walnuts (toasted is best!), oranges, red onions, balsamic vinegar, olive oil, and S&P. Toss and sprinkle with crumbled blue cheese.
