2 Cans Cream of Chicken Soup (98% fat free)1 Cup Chicken broth or boullion1 Chicken breast, cubed and cooked2 Cups Rice1 Cup shredded cheddar cheese1 Can Pineapple tidbits1 Chopped tomato1 Cup crunchy chow mein noodles1/2 Cup sweetened coconut flaked2 Tbs chopped shallots
Cook rice according to package instructions. Meanwhile, in a large saucepan mix together chicken soup, broth or boullion, and cooked chicken cubes. Heat on med-high until hot. Remove from heat.
To serve, start with rice, then add chicken mixture on top of rice. Add tomato, crunchy noodles, pineapple, coconut, and shallots as desired.
