Heart Healthy Cornbread

Ingredients
4 egg whites¼ cup canola oil1 ½ cups buttermilk2 cups self-rising cornmeal
Directions
Heat oven to 425 degrees. Spray or oil either a 9 x 9 inch pan or 10 inch cast iron skillet and preheat in oven. Beat eggs. Add oil and buttermilk. Blend. Add cornmeal and stir to blend well. Pour into preheated pan. Bake 25 minutes until golden brown on top.
