Salsa and Beef Stir Fry

Ingredients
1 Yellow Onion, chopped2 large potatoes, peeled and chopped1 tbs. of olive oil1 package extra lean ground beef1 sweet red bell pepper1/2 to 1 jar Herdez salsa, mild1 cup fresh spinach leaves
Directions
Chop the onion, peel the potatoes, and cook in a skillet until potatoes are soft.

In a larger pot, brown the beef. Chop the red peppers and add them to the beef.

Add the potato/onion mixture and mix well. Wilt the spinach overtop, finish with a half jar to a full jar of the Herdez salsa and mix well!

Divide into 6 portions and serve with some brown rice or quinoa!
