SHORTBREAD Buttons - The Best tasting Shortbread EVER !!!!

Ingredients
Directions
1 cup unsalted butter (softened not melted)1/2 cup icing/powdered sugar1/4 cup cornstarch1 1/2 cups flour (white)1/2 tsp salt
Preheat oven to 300 degrees F
In a bowl combine ALL ingredients, using a fork or pastry cutter you need to mash the softened butter and dry ingredients together...it seems impossible at first and you will likely need to give your arm a rest as this requires serious elbow grease! Keep mixing the ingredients and mashing them into the butter, the mixture will first become crumbly and then eventually after 10-20 minutes of fork mashing you will have a nice dough consistency. Roll into small balls (use a little less than a tsp of dough) take the ball and flatten it slightly so it is still round but not too flat, it should look like a chubby button...finally you take a tooth pick and poke 4 holes in it so it looks like a button.
Bake for 12-15 minutes, the bottom of each cookie will be a beautiful golden brown but the tops of the cookies stay white and look like they are undercooked when first brought out of oven...check the bottom if it is golden brown then remove from hot pan to cool, once completely cool the cookie will set and not fall apart like they do when hot out of the oven.
If you want to spruce them up a bit, check out my recipe for Homemade Sugar free chocolate, you can dip each cookie half way in chocolate, let them set and now you get the best of both worlds...shortbread & chocolate !
