Tisha's Lentil taco filling

Ingredients
1 cup chopped onion1 minced garlic clove1 tsp olive oil1 cup lentils4 tsp taco seasoning2.5 cups chicken broth1 cup salsa
Directions
Cook onion and garlic in olive oil. Add remaining ingredients, except salsa. Bring to boil. Reduce heat; cover and simmer 25-30 minutes. Uncover and cook for 8 more minutes, until thickened. Mash lentils. Makes 6 1/2 cup servings. (I divide this into two whole wheat tortillas and add cheese and sour cream, not included in calories here)
