Spicy Broccoli Frittata

Ingredients
1/2 T. Canola Oil4 C. Broccoli, chopped4 Small Onion, Halved and sliced2 tsp. Cayenne Red Pepper Flakes2 Eggs8 Egg Whites1/4 tsp. salt1/2 tsp. cracked pepper
Directions
Preheat oven to 350 degrees. In a preheated non stick skillet on high heat place Canola Oil. Immediately add onions and caramelize (reduce heat slightly). Add broccoli, cook 2 minutes and then add red pepper flakes. Remove from heat. Meanwhile, add eggs and egg whites and beat until frothy. Add salt and pepper to eggs. Pour over vegetable mixture and cook in oven until set. (approx 10-15 minutes). Serves two.
