Mixed Bean Chili (no meat)

1 T bacon fat (tastes better than oil, but not vegetarian)2 T chili powder1/2 T ground cumin1 t ground coriander1 t crushed red pepper1/4 t cayenne pepper1 T oregano, dried1/2 c onion,chopped5 cloves garlic, pressed or minced15 oz can black beans15 oz can pinto beans15 oz can kidney beans14 oz can diced tomatoes3 oz tomato paste (1/2 6 oz can)
Mix spices in small bowl and set aside. In large saucepan, melt fat. Once fat is hot, but not smoking, add onions and garlic. Saute a few minutes, until onion is tender. Do not brown the garlic. Add spices and heat through. Add beans, tomatoes, and tomato paste.
Cover and simmer 2 hours, or bake at 350 degrees for the same, or cook in a slow cooker on low for 6-8 hours.
Serve topped with grated cheese and chopped onions, if you like. Serves 8.
