Spinach & Cheese Egg White Omlet

1TBS Extra Virgin Olive Oil1C Liquid Egg Whites1C Sea Salt (pinch)Ground Pepper (to taste)Fresh Spinach (chopped)1/4C Weight Watchers Mozzarella Cheese
Makes 1 Serving
1. On the stove (med-high) heat 6-8 in pan
2. Coat pan with Olive Oil
3. Quickly pour in Egg Whites
4. Add salt & pepper
5. Cover 1/5 of the eggs with chopped Spinach
6. Add Cheese to top of Spinach
7. Let cook 4-5 min. or until Egg bottoms are golden brown
8. Use spatula to fold omlet in half (flipping the egg half on top of the spinach & cheese half)
9. Remove from Pan
**Much like any omlet you may add any extra veggies & meat that you wish... spinach & cheese was all i had in the regrigrator.* ENJOY
