Black-Eyed Pea and Collard Greens Soup

Ingredients
2 cans Eden Organic Black-Eyed Peas2 tbsp olive oil1 1/2 cup chopped onions3 garlic cloves, finely diced1 cup diced celery6 cups vegetable broth4 cups collard greens, thinly sliced1 1/2 cups chopped carrotsSalt and Pepper to tasteCayenne Pepper to taste
Directions
Heat oil over medium heat in a large pot. Add onion, garlic, ham and celery and cook until onion is translucent, 5 to 8 minutes. Add broth, bring to a boil and skim off and discard any foam on the surface. Add collard greens and carrots and simmer until tender, 15 to 20 minutes more. Add beans and cook until heated through. Season with salt, pepper and cayenne and serve.

    This soup was easy to make. It has a nice flavor and is a great way to use Collard Greens. I recommend chopping the collard greens instead of just slicing them. I sliced them and ended up with long strips of greens. - 1/26/11
