Fresh Corn Salad

Ingredients
2 cups fresh or frozen corn1 cup chopped red ripe tomatoes1/2 cup chopped zucchini1/2 cup chopped peeled cucumber1 red onion, chopped1 red pepper, chopped1/2 cup Kraft Light Done Right Italian Dressing
Directions
Cook corn in boiling water about 5 minutes or just until tender. Drain; cool to room temperature. Transfer to large bowl. Add tomato, zucchini, cucumber, onion and pepper. Pour dressing over and toss to coat. Refrigerate at least 1 hour.

    I made this without cooking the corn and it was delicious and super easy to make. I'd also cut back on the amount of dressing...It was just too watery. - 7/13/11
