1/4 C butter softened1/4 C veg oil1 C brown sugar1 tsp cinnamondash of nutmeg1/2 tsp baking soda1 tsp baking powder1/2 tsp salt1 egg1 C shredded zuchinni
Pre-heat oven to 350
In a mixing bowl combine butter, oil and sugar and cream until smooth.
In seperate bowl sift flour , spices ,soda, powder and salt.
Add egg to cream mixture and mix.
Slowly add the flour mix to butter mix.
Beat until smooth.
On paper towels squeeze the zuchinni to get rid of extra moisture.
Add the zuchinni to mix and blend.
Spray a loaf pan with cooking spray and add bread mix.
Bake for 55-60 minutes.
Cool on a rack for a few minutes.
