Mina-Inspired Shepherd's Pie

* Ground beef, lean, 100 grams * Carrots, raw, .5 cup, chopped * Onions, raw, .5 cup, chopped * Garlic, 1 clove * Diced Tomatoes, No Salt Added, 1 cup * Tomato Paste, .25 cup * *Worchestershire Sauce 1 tsp/serving, 2 serving * Beef broth, bouillon, consomme, .67 cup * Mashed Potatoes, 2.5 cup * Mozzarella Cheese, part skim milk, 4 oz * Butter, salted, 2 tbsp * Parmesan Cheese, grated, 3 tbsp * Milk, 2%, .3 cup * Salt and pepper to taste * 2 tsp dried rosemary
Brown ground beef.
Add in finely chopped carrots, onion and garlic.
Simmer 5 minutes
Add in tomatoes, tomato paste, beef stock, worchestershire.
Reduce another 20 minutes. Preheat oven to 400 degrees. Meanwhile, boil potatoes. Once fork-tender, mash with butter, parmesean and milk until smooth.
Pour beef mixture into oven-proof casserole. Top with potatoes and cheese. Bake for 25-30 minutes. In the final 5 minutes, switch to broil and broil top.
Makes approximately 8 servings.
