Potato Salad

Ingredients
6 medium or 4 large potato chopped into 1/2 inch piecesdiced celery, 1 cupdiced onion 1/3 cup1 1/2 cups mayonaise3 tsp sugar1/3 cup vinegar2 tbspn mustard2 tbspn relish4 large hard-boiled eggs, peeled and diced
Directions
Place potatoes in a large pot, cover with water. Boil potatoes until soft- about 15-20 minutes. drain. combine mayo, mustard, vinegar, sugar, relish in a large bowl. add celery, cooked potatoes and onions, stir until mixed. fold in diced hard-boiled eggs. Sprinkle with paprika and refrigerate for at least 3 hours before serving.
