Quick White Bean and Ham Soup

10 oz diced ham2 tbsp olive oil2 cloves garlic, chopped1 medium yellow onion, chopped1 cup celery, chopped2 cans (15oz) white kidney beans, drained1 can mild ro-tel tomatoes with green chiles2 cups water2 bay leaves2 tsp Penzey's Bavarian Seasoning
Heat olive oil in dutch oven over medium heat. Add garlic, onions and celery. Saute until onions are transparent. Add ham and saute for another 5 minutes. Add rotel tomatoes, water and beans and bay leaves. Bring to a boil. Lower heat to a simmer and cover. Simmer 30 minutes. Use immersion blender to partially blend soup to thicken.
