Turkey Noodle Soup

Ingredients
8 cups leftover turkey, mostly white meat no skin1 cup chopped celery1 cup chopped carrots1/2 cup onion, diced1 tbs olive oil8 cups water8 cups low sodium chicken brothpasta nests(broken up) or other small pasta
Directions
put olive oil and veggies into a 12 qt stock pot over med heat. Saute until veggies are limp. Add the turkey and 8 cups of water. Cook for one hour. Add chicken broth and bring to a boil. Add the pasta and stir (it will stick to bottom if you don't) until broth is boiling again. Cook per directions on package. When pasta is done, the soup is ready to serve. 12 generous servings.
