ED'S Chicken and Rice Soup

Ingredients
5 quarts of homemade chicken broth, fat skimmed off4 stalksof celery with leaves diced1 bunch scallions both white and green diced1 cup Basmati rice1.75 lbs. diced chicken both light and dark meat no skin
Directions
24 servings, 1 cup

Prepare 5 quarts homemade chicken broth.
Add celery, scallions, rice, and cooked chicken to broth and bring to a boil. Reduce heat and simmer until rice is tender.
