Ingredients
(1) Small Bag Dried Pinto Beans(1) spanish brown onion(4-6) cloves of garlic(1) Tbls ex virgin live oil (2) bay leaves (2-3) teaspoons of chicken bullion (reduced sodium if you can)
Directions
Place beans in pot with water just above them. Bring to boil. Turn off, cover and let set for 2hrs. Rinse beans. Place back in pot again with water just above and add 2 bay leafs, cover with lid. Bring to simmer for 1 1/2 hr aprox. Mix chicken bullion in warm water that will be added to the beans as needed. Keep water just above beans, do not let water run out. When beans feel tender.......Dice up onion and crush garlic. Cook in pan with olive oil. When onion starts to brown add a little water from the been pot to deglaze pan. Combine beans (leave water in pot) and onion mixture in food processer or blender and pulse. You will need to use bean pot water to acheive a desired consistancy. No water will make the mixture to dry, so add water to blender/processer slowly to get mix right. Enjoy! 8=1/2 cup servings
