Modified Easy PB Cookies

Ingredients
1 cup reduced fat peanut butter1/2 cup granulated sugar1 egg1 tsp vanilla extract
Directions
Preheat oven to 325°. Add items together in a bowl--peanut butter, then sugar, then the egg, then vanilla extract. Beat at a low setting until thoroughly mixed, with a nice texture. Wash your hands for good measure, then roll ping-pong ball-sized balls of dough between your hands and plop on a (properly buttered/greased/what have you) cookie sheet, spaced maybe 3" apart. Make a little lattice pattern on top with a fork, but don't press hard. Pop each sheet in the oven for 8-12 minutes, depending on how soft you like your cookies. Should make about 14 servings.
