2 tsp. extra-virgin olive oil1 onion, chopped1 stalk celery, chopped1 carrot, chopped (optional)2 small red potatoes, cubed1 tsp. cuminBlack Pepper, 1-2 turns of the grinder1 cup split green peas4 cups vegetable stalk or water1 bay leaf1/2 cup fresh peas1 tsp. sea salt1 tsp. dried dill
Heat the oil in a dutch oven and saute the onion until soft. Add the celery, potatoes, carrot, cumin and pepper. Saute 6 minutes. Add stock, split peas, and bay leaf. Bring to a boil, lower heat, cover and simmer for 1 1/2 hours. Add fresh peas, salt, and dill. Heat for 3 minutes and serve.
