(1 T butter, 2 c water)1/4 cup diced red onion8 oz sliced mushrooms10 oz extra wide egg noodles1 pkg fully cooked pot roast with gravy(1/4 c sour cream, 1/8 tsp pepper)
In skillet over med-hi heat, place butter, onions, mushrooms, water and noodles. Cover; bring to a boil. Uncover when boiling; continue boiling 5-6 min, stirring occasionally. Meanwhile, remove roast from pkg; cut into bite sized pieces. (Reserve Gravy).
Stir roast, gravy and sour cream into noodle mixture. Cook uncovered until thoroughly heated, about 3 minutes. Season with pepper; serve.
