Beef Vegetable Barley Soup made with Chicken Broth

Ingredients
2 cups diced carrots2 cups diced celery1 medium onion3 quarts chicken broth3 cups pear barley1 tbsp. olive oil1 lb beefSalt to tastePepper
Directions
Chop beef into small cubes and brown in half of olive oil. Remove from pan. Saute carrots, celery, and onions in other half of olive oil until soft (around five minutes). Add the mushrooms, barley, chicken broth, and beef. Cook 2 hours stirring often.
