1&1/4 POUND SKINLESS CHICKEN BREAST FILLETSFINELY GRATED RIND OF 1 LIME2 TBSP FRESH LIME JUICE1TBSP OF RUM OR SHERRY1TBSP LIGHT BROWN SUGAR1TSP GROUND CINNAMON2 MANGOES , PEELED AND CUBED4 WOODEN SKEWERSRICE AND SALAD TO SERVE
CUT THE CHICKEN INTO BITE SIZE CHUNKS AND PUT IT IN A BOWL WITH THE LIME RIND, LIME JUICE, RUM OR SHERRY, SUGAR AND CINNAMON. TOSS WELL, COVER AND MARINATE FOR 1 HOUR IN THE FRIDGE. SOAK THE WOODEN SKEWERS IN WATER FOR 30 MIN. THREAD CHICKEN ONTO SKEWERS ALTERNATING WITH THE MANGO CUBES. GRILL SKEWERS OVER HIGH HEAT FOR 8-10MIN BASTING WITH MARINADE UNTIL CHICKEN IS BROWN AND COOKED THROUGH . DO NOT BASTE WITH MARINADE DURING THE LAST 5 MINUTES OF COOKING. SERVE WITH RICE AND SALAD. MAKES 4 SERVINGS.
