Chicken Salad Dijon with Apples and Grapes

Ingredients
1 lb trimmed boneless, skinless chicken breast 3 tsp olive oilsalt to tastepepper to taste3 tbs fat free plain (or vanilla) yogurt1/3 cup chopped celery 1/2 cup seedless grapes, each cut in half1/2 cup chopped red apple
Directions
1) cook chicken in skillet with 1 tsp of olive oil and salt & pepper; let cool and then cut into bit size pieces

2) in large plastic mixing bowl, combine 2 tsp olive oil, yogurt, and mustard.

3) Add the chicken, celery, grapes, and apples.

4) gently toss well. Season with salt and pepper, then serve
