Ham, Egg & Cheese Breakfast Casserole

Ingredients
1 cup low-fat fiesta cheese12 oz. egg substitute1 can (12 fl oz) fat free evaporated milk1 pks (28 oz) frozen shredded hash brown potatoes1/4 cup onion, chopped12 oz. cubed 95% lean ham
Directions
Preheat oven to 350F degrees
Spray 9x13 glass casserole dish
Saute onion in cooking spray until tender. Combine all ingredients in a bowl and mix well. Pour mixture into the prepare baking dish. Bake for 60 to 65 minutes at 350F (or until set).
