*Brown Rice, long grain, 1 cup (remove)Peas and carrots, frozen, 0.5 cup (remove)Scallions, raw, .5 cup, chopped (remove)Egg, fresh, 1 jumbo (remove)*Canola Oil, 2 tbsp (remove)
Chop scallions, heat oil in frying pan. Stir-fry scallions, add peas and carrots and stir until tender. Push to side, add beaten egg and cook until done. Mix into scallions and peas and carrots. Stir cooked rice into mixture in pan, stir until heated. Top with soy sauce
