Down Home Potatoe Salad

Ingredients
10 baker Potatoes1.5 c. Chopped Red Onion1 c. Sweet Pickle Relish (or Dill Relish)1 sm. Jar Diced Pimentos, drained1 sm. Can Sliced or Chopped Black Olives1 c. Hard Boil Eggs, chopped1 1/4 c. Mayo, fat free or light1/4 c. MustardPaprika, a few dashes mixed in and a few sprinkles on top. Salt, to tastePepper, to taste Parsley Flakes
Directions
Peel potatoes and cut into chunks, add enough water to cover potatoes, cook until tender, drain well. Pour into large bowl, add all ingrediants and stir. Season with Paprika, Salt and Pepper to taste. Smooth the top, then sprinkle more Paprika and dried Parsley Flakes to garnish.
Makes approxiamately 22, 1/2 cup servings.
