Spring Roll Salad

Ingredients
1 Tbl olive oil1 med yellow onion, finely chopped2 tbl minced garlic2 tbl chopped, peeled fresh ginger3 cups finely shredded green cabbage1/4 cup chopped fresh cilantro, w/o stems1 tlb low-sodium soy sauseSalt to taste
Directions
Heat oil in lg saute pan over med-high heat. Add onion and saute until softened, but not colored, 2 min. Add garlic and ginger and saute for 1 min longer. Add cabbage and stir-fry until cabbage is softened, about 2 min.

Remove pan from heat. Add cilantro and soy sauce. Stir until combined. Season with salt if desired.
