Ground Chicken Chili

Ingredients
1 lb Ground Chicken, Extra lean1 large onion, chopped1 large bell pepper, chopped2 stalks celery, chopped1 large carrot, sliced2 cans kidney beans (19oz)2 cans chopped tomatoes (28oz)cuminchili powdersmoked paprikasalt and pepper
Directions
Brown the ground chicken in 1 Tbsp oil. When cooked through, remove from pan. Saute celery, onion and carrot in remaining oil. When soft add in pepper and saute a couple more minutes. Add the chicken back into the pan, add seasoning to taste, and add beans and tomatoes. Let simmer for 1/2 hour and enjoy! Makes 8 1 1/2 cup servings.
