rhubarb spice cake

Ingredients
1/3 cup boiling water2 cups chopped rhubarb (fresh or frozen)1 1/4 cups sugar2 cups flour1 1/4 tsp baking soda1 tsp salt1 tsp ground cinnamon1 tsp ground nutmeg1 tsp groung cloves1/4 cup canola oil1/4 cup apple sauce (unsweetened)2 eggs1/4 cup egg substitute1 tsp vanillaPour boiling water on rhubarb. Mix remaining ingredients. Stir in rhubarb mixture. Spray baking pan with non stick cooking spray,Bake in a 13x9x2 pan for 45 to 50 min. at 350 degrees.24 cupcakes may also be used - bake approx. 20 minutes.ice or serve plain
