Kit's Healthy Waffles

DRY INGREDIENTS1/2 cup white flour1/2 cup whole wheat flour3 tsp. baking powder1/2 tsp. salt2 TBSP. granulated sugar1/2 cup oat branWET INGREDIENTS1 large egg1 1/2 TBSP oil1 cup 1% or skim milk1 tsp. vanilla extract
Preheat waffle iron.
In a large bowl, sift white flour, whole wheat flour, baking powder salt and sugar together. Add oat bran and stir to combine well.
In a smaller bowl, combine egg, oil, milk and vanilla and whisk to mix well. Add liquid to dry ingredients and stir well to combine, but do not overstir.
Spray hot waffle iron very lightly with cooking spray. Scoop mix with a ladle onto waffle iron and cook until lightly browned and crisped. Makes 5 waffles.
SERVING IDEAS:
1 cup fresh strawberries and 1/4 cup lowfat ricotta cheese (my favorite)
1/2 cup lowfat vanilla yogurt and 1 cup mixed fresh fruit
1 1/2 tbsp peanut butter, sliced bananas and wheat germ
