Chocolate Mousse

Ingredients

4 egg yolks1/2 cup fructose2 1/2 cups heavy whipping cream6 oz Ghirardelli 100% Cacao Unsweetened Baking Bars, chopped
Beat eggs yolks on high speed until thick
gradually add fructose
heat 1 cup whipping cream on medium heat
gradually add half to egg mixture, then combine back into saucepan
cook on low for 5 minutes, stirring constanly, until thickens
let cool for 10 minutes, add chocolate, stir until thick
cover and refriderate for 2 hours
beat remaing 1 1/2 cups of heavy whipping cream in chilled bowl until stiff
mix into chocolate mixture
