Hearty Vegetable Minestrone

Ingredients
Garlic, 2 cloves mincedOlive Oil, 1 tbsp Onions, raw, 114 grams chopped finelyCelery, raw, 100 grams dicedCarrots, raw, 250 grams dicedZucchini, baby, 275 grams slicedGreen Beans (snap), 152 grams slicedRed Ripe Tomatoes, 1 cup cherry tomatoes wholeRed Ripe Tomatoes, 432 grams quarteredSpinach, fresh, 100 grams shreddedTomato Paste, 65 grams Beans, red kidney, 260 grams (canned and drained)Gluten free pasta shapes, 100 gram(s) 1.7L waterItalian herbs-fresh +- handfullblack pepper to taste
Directions
Fry the onion and garlic in the olive oil until translucent. Add the rest of the vegetables, tomato paste, herbs,pepper, sugar and water. Bring to the boil and then reduce to just simmering for 2 hours. Add the beans and pasta 10 minutes before end of cooking time. Serve with minced fresh basil leaves. Serves 6
