pineapple, cashew, raisin curry rice

Ingredients
brown ricevegetable brothbutterwhite onioncurry powdercashewsraisinspineapplesaltpepper
Directions
combine rice and broth in 2-quart saucepan. bring to a boil. then simmer about 45 mins or until liquid is absorbed (low heat).
add butter and onion to non-stick skillet on medium heat. cook and stir about 2 mins. add curry powder, 1/4 teaspoon salt, and 1/4 teaspoon pepper and stir. add pineapple, cashews, and raisins.
add rice to mixture and mix.
