Spinach Omlette for One

Ingredients
1 tsp canola oil1/4 of a red bell pepper, diced1/2 cup frozen spinach2 egg whites1/2 oz pepper jack cheese
Directions
Heat oil in a small skillet on medium heat. Add red pepper & spinach. Saute for about 5 minutes until pepper is tender. Pour beaten egg whites over spinach and bell pepper. Fold egg in pan until cooked through. Spinkle a little cheese on top. Serve.
