stir fry chicken and broccoli
- Number of Servings: 4
Ingredients
Directions
1/4 cup water1/3 cup soy sauce2 Tbsp brown sugar1 garlic clove (mashed or minced)1 tsp corn starch1 tsp ground ginger2 whole boneless skinless chicken breasts (4 pieces)1 Tbsp oil (I used sesame; peanut would prob be best)1 bunch broccoli, cut into pieces1 medium onion, cut in slices/slivers1/4 cup water
Mix the first 6 ingredients and marinade the chicken in this liquid for at least 10 minutes. Then stir-fry the chicken, draining off as much liquid as possible. (Save the marinade for later.)
Cook the chicken until browned, then remove the chicken from the pan. Stir-fry the broccoli and onions for about one minute, then add 1/4 cup water, cover, and let the vegetables steam for about 2-3 minutes, until the broccoli is tender. Add the chicken and the remaining marinade, and heat through.
Serve with rice or lo mein.
