Slow Cooker Mexican style pinto beans

1 bag (1lb) pinto beans4 cups H208 oz diced ham, diced2 gloves garlic, crushed1 med. onion, chopped (about 1 C)1 tsp crushed red pepper1/2 tsp salt1/4 tsp black pepper1 tsp thyme1 tsp oregano1 can (15oz) no salt added diced tomatoes
Rinse pinto beans and discard any stones. Place in pot and cover with water. Soak overnight. Drain and place in crockpot. Cover with 4 cups water.
Add all other ingredients. Cover and cook on low 8-10 hours, until beans are soft to your liking. If you want, add more ham at the end of cooking to amp up the flavor. Makes 8 servings.
