Crockpot Bison Chili

2lbs ground bison32 oz. can whole tomatoes32 oz. can diced tomatoesLg. can dark red kidney beans1/2 small onion - slicedchili powder
Spray a frying pan with non-stick spray. Brown the ground bison and chop into small pieces. When no longer pink add chopped onions and cook until tender.
Meanwhile - put the remaining ingredients into the crockpot. Add the brown meat & onion mixture.
Cook on high for at least 4 hours.
Makes approximately 12 servings

I love how easy (and cheap!) this meal is. I used 1lb of bison and 1lb of beef (its what I had), and I drained the fat off through a colander once the meat was cooked. This way and can add grated cheese on top without the guilt! I also added some corn and an orange bell pepper. Yummy! - 7/4/10
