Spinach Fritters

Ingredients
1 bunch spinach, washed and chopped1 chopped onion1/4 c flour or nutritional yeast1 tbsp olive oil1 tbsp arrowroot or cornstarch1-2 tbsp Bragg/tamari/soy sauce1 pack firm tofu1/2 tsp nutmeg
Directions
Saute onion. Add spinach, cover, take off head for one minute. Drain.

Mix or blend the rest of the ingredients.

Form into fritters and fry in some oil spray until each side is golden brown.

    Spinach and nutmeg combined to give this a very strange flavor. The fritters stuck to the pan so bad I ended up putting them on a greased cookie sheet and baking them. They stuck to the cookie sheet too. Overall, this recipe was a disaster. - 4/21/10
