Amish Friendship Bread - lightened

1 cup Amish Friendship Bread starter2 eggs plus2 egg whites1/2 cup canola oil plus1/2 cup unsweetened apple sauce1/2 cup skim milk1 cup sugar2 tsp cinnamon1/2 tsp vanilla1.5 tsp baking powder1/2 tsp salt1 cup flour plus1 cup whole wheat flour1 large box instant sugar free fat free vanilla pudding mixfor the topping:1/4 cup sugar1/2 tsp cinnamon
Combine all except the final 2 ingredients. Combine the 1/3 cup sugar and 1 tsp cinnamon in a separate bowl.
Spray 2 loaf pans with non-stick spray, dust with 1 tablespoon each of the cinnamon sugar mixture. Pour batter evenly into the pans and sprinkle the remaining cinnamon sugar mixture over top.
Bake 1 hour @ 325 degrees. Cool until bread loosens from the pan (10 minutes) serve warm or cold.
