Grilled Cheese and Butternut Squash Sandwich

Ingredients
2 slices sourdough bread1/4 cup cheddar cheese, sliced1/2 cup butternut squash, cut and roasted1/2 tsp olive oil1 tbsp lightmayonnaise1 tbsp butter
Directions
Peel butternut squash, and cut into small fry-like strips. Toss in olive oil and place on a baking sheet. Roast at 400F for 20 minutes, tossing once or twice.

Meanwhile, spread mayonnaise on each slice of bread. Spread the cheese out, leaving spaces on alternate slice of bread (so that everything is covered when the sandwich is closed). Once butternut squash is roasted, cover on slide of bread with strips. Close the sandwich, and spread butter on each side of the sandwich. Grill on a hot griddle until both sides of the sandwich are brown, and the cheese is melted.
